Extraction: Distillation of the seed, & fruit

Extracted by steam distillation from the dried ripe seeds or fruit, Caraway has a strong, sweet-spicy aroma. 

biennial herb, up to 75cm high which has many branches, finely cut leaves and umbels of white flowers with a thick, tapering, root. The small seeds are curved with five distinct pale ridges. Native to Europe and Western Asia and naturalized in North America. Now widely cultivated in Germany, Holland, Scandinavia and Russia. There are several varieties depending on the origin - the English, Dutch and German types derive from Prussia which is a distinct form of the Scandinavian variety. The plant grown in the northern latitudes produces more oil.
